Ingredients: Ball figs from Iran, wild growth.

These delicious little figs come from the semi-desert regions of the high valleys of the Iranian Zagros Mountains. It hardly ever rains here. The main source of moisture is the enormous difference in temperature between day and night.

The Zagros figs ripen and dry on the tree until they drop in mid-August to the end of September. They are collected once a week and spread out in the sun for a few days before being packaged.

The fig itself is not actually a fruit in the familiar sense, but a fleshy blossom.
