The dragon fruit (pitahaya) from the cactus family consists of around 90 % water and contains lots of iron, calcium and phosphorus as well as vitamins B, C and E.
The ripe fruits are dried at approx. 55 °C. Due to the high water content of the dragon fruit and the high humidity in Thailand, drying it to raw food quality is a challenge that has not yet been overcome. The temperature of the fruit is a maximum of 45-50 °C due to the evaporative cooling. Antioxidants, such as the violet-red colouring of the dragon fruit, are generally heat-stable.
Note: If large quantities of dragon fruit are consumed, a laxative effect may be noticed due to the high-fibre seeds.
